« Imperial Dragon’s Well » is the most famous variety of Lung Ching.

It is harvested prior to the Clear Light festival, before the spring rains arrive. Its quality is judged according to four criteria: golden green colour, sustained aroma, exquisite flavour, and leaves ‘as flat as a sparrow’s tongue’. 

Purists claim that it attains perfection when prepared with pure water from the Galloping Tigers spring, which emerges from the ground near a temple in the vicinity of the estate.
